Have you thought that kale is one of those vegetables that you ought to love? Should love because you just know it is good for you? Just look at those dark leafy greens. They must be healthy! whether a kale love or looking to convert I have a recipe that is easy and fun to make and best of all – it tastes great! To start you need clean hands because the dish calls for you to ‘get messy’. You will need one bunch of kale leaves, juice of 2 tb , a head of garlic, sea salt, a tablespoon of tehini and some sesame seeds to garnish. De-stem the kale leaves by ripping off the core from the leaf which is easy if you grab hold of the leaf and ‘unzip’ it from the stem starting at the top. Now lay your leaves one on top of another, roll them and shred finely with a knife. In a bowl mix well the tehini with the juice of one and a half lemons and 1 tsp of salt. Add in the minced garlic of 3 cloves and taste. You may want to add a touch more lemon or salt depending on the size of the lemons you used. Now comes the fun part. Add the shredded kale and mix into the tehini bowl using your hands.
